A great way to start the day, this smoothie begins with juicy cucumbers, the perfect summer hydration. The berries are bursting with flavor and natural sweetness along with cell protecting antioxidents. The coconut oil is rich in omegas, and the basil – fresh and fragrant from the garden – is rich in Vitamin A and K plus lutein and zeaxanthin, both eye-protective. And the collard greens, a nod to my southern roots, along with the chard, are rich in vitamins and fiber.
1 cucumber, skin on if organic, cut into large pieces
½ cup fresh frozen blueberries
½ cup fresh frozen raspberries
1 frozen medium-sized banana, cut into large pieces
1 Tablespoon coconut oil
handful of basil leaves
2 medium collard leaves, stem removed
2 medium rainbow chard leaves, stem removed
1 cup unsweetened almond milk
½ cup coconut water (more as needed for consistency)
1 Tablespoon goat or hemp protein powder
1 teaspoon turmeric powder
1/4 teaspoon cayenne
Combine all ingredients in a Vitamix (or other high speed blender) and blend until smooth and creamy. Sip slowly as you give your body the gratitude it so richly deserves and embrace the opportunities that abound in the brand new day ahead!
